Diet Update

Today marks day 9 of being on the Atkins Diet. I really can't believe it has been that long! The first few days were horrible. I was hungry all the time, had the shakes, and a horrible headache. If I could have hit someone or something, I gladly would have without hesitation. I figured out that my body was reacting more towards not having caffeine than not having as many carbs. I drank a lot of caffeine before the diet. I also discovered in those first days that I have to eat loads of vegetables. Meat and vegetables are the major part of my diet. I don't have the problem with the meat, but I have never eaten a lot of vegetables. Now, I eat A LOT of vegetables.

I weighed Wednesday evening (the week mark) and I had lost 6 lbs! Something else I've learned is not to weigh every day if I want to succeed at this diet.  My weight at times seems to be all over the board, so I will only weigh once a week.

I haven't followed the diet religiously. I do every now and then have a shot of coke just to give myself that taste. Many people have said to try Pepsi Max. I tried it. I hate it. It just tastes like every other diet soda out there. I don't like the taste of diet soda. I also have been eating cottage cheese which isn't on the list. It's on the old list in the book I read, but not on the updated list. Because I don't want to waste a tub of cottage cheese, I will be eating it until it's gone. When I get a craving for something sweet, I have a few grapes. Grapes are not on my list, but I can tell you a few grapes is much better than giving in to a couple of cookies. I pick my battles.

I feel so much better already. I'm not getting sluggish in the afternoons and I have so much more energy. With the absence of caffeine, by 9:30 p.m. I am ready to go to bed. Although, right now it's 10:30 p.m. and I'm still awake...

Anyway, I have found that trying new recipes keeps the diet interesting. Out of every 3 or 4 receipes I try, I find a good one. The breakfast bites I talked about in my first diet blog are good and easy to make. The recipe for today is a chicken recipe. I ate too much when I tried this. It's really good!


Chicken Jack
3 boneless, skinless chicken breasts (cut into strips)
6 strips bacon, fried and crisp (crumbled)
1/4 cup Ranch dressing
1/3 cup shredded monterey jack cheese

Fry chicken strips in butter till done. Put chicken into a lightly greased casserole dish. Pour dressing over chicken. Put crumbled bacon on then cheese. Broil till cheese is melted and lightly brown. Soooo Gooood!
