It Begins Tomorrow

I'm not the type of person who yo-yo diets. I'm not the type of person who really ever diets (surprise, surprise). Lately, I've been convicted to take better care of myself. I love to hike and backpack, and always counted on those activities for my physical exercise. But, it really needs to be the other way around. I should exercise in order to be fit so that I can hike and backpack. The thought of getting stuck out on the trail while I'm trying to kill myself with my over-sized pack (because I always pack too much) and my out of shape body does not sound very recreational.

The other day while cleaning out a cabinet at work, I came across an Atkins Diet book. Call this coincidence? I think not...I work at a church. I've been reading through this book for about a week and have decided to try the diet out. This will be very hard for me because I am in love and totally enamored with carbs. Well, tomorrow is D-Day...literally.

I planned the menu out for the week, went grocery shopping (with my coupons), and have even prepared my lunch and snacks for tomorrow. The first 14 days of the Atkins diet is called the Induction Phase. There are only certain foods you can eat for those 14 days. It's really a long list and isn't so bad once you look at recipes. I've decided to share some of the recipes as I try them out. I will also use my blog as my diet journal, although I will NOT under any circumstances post my weight, I don't care what they say about accountability...it just ain't happening.

Here is the recipe for Breakfast Bites. I actually made them into breakfast muffins because I don't have a mini muffin pan. I've already tried these and they are very good.

Breakfast Bites
6 large eggs
Crumbled bacon, sausage, or ham
Shredded cheese
Diced onions, peppers, and/or tomatoes
Mini muffin pan

Place a teaspoon of meat into each cup of the muffin pan
Add your choice of veggies
Beat eggs and pour egg mixture just a little over halfway in each cup
Top with shredded cheese
Bake in the oven at 350 degrees for about 10-12 minutes
Let cool, wrap each in plastic wrap. Heat as needed and refrigerate the rest.
